If I actually end up doing all the canning I want to this year, I will need:

- 25 lbs of apples
- 6 lbs of pears
- 5 lbs of peaches
- 35 lbs of tomatoes (which seems really low, will have to check)
- 3 lbs of garlic, at least
- 1 lb of mixed hot peppers (or so)
- 10 lbs of beets
- 5 pints of blackberries
- 7 pints of strawberries
- 2 oranges
- 2 lemons
- 1 lime
- 3 lbs of raisins
- 5-6 mangos
- 6 lbs or so of onions and 1.5 cups of pearl onions
- 10 red peppers or so
- 8 green peppers
- 1 yellow pepper
- 1 head of cauliflower
- some celery and carrots
- large quantities of assorted herbs, both fresh and dried


....oh dear, oh dear, oh dear. Then again, that's canning about 20 different things, which probably won't happen, so I won't need quite so much produce. Besides, I'm poor - I can't afford this much produce anyways, Farmer's Markets or not! I also really need to find a resource that tells me what's in season when, because I have no clue.

EDIT: [info]lilactime is my domestic Goddess! Well, she always was (Mmm...truffles) but now even moreso!

I also really need to find a resource that tells me what's in season when, because I have no clue.

apples - September to October depending on the variety
pears - same, unless you want the sweet little ones, in which case, late August
peaches - now! go now!!! You've probably only got anothe week or so for peaches.
tomatoes - also now until fall
garlic - year 'round
mixed hot peppers - next couple of weeks
beets - now until fall
blackberries - meh, you might possbily have missed these, it's usually late July, early August
strawberries - now to late September
mangos - April if you want the good ones
onions and 1.5 cups of pearl onions - now until fall
peppers - now until fall, all varieties
cauliflower - soon - late August, early September
celery and carrots - now until fall
large quantities of assorted herbs, both fresh and dried - now

You're the best resource in the world! Thank you SO much. I already did one load of peaches, but they seemed small and early, so I wasn't sure when the good season was ;)

April for Mangos...perfect - they're to make mango chutney for my mom. Mother's Day!

If you hit Little India in April, you can find those lovely sweet mangoes ("Haden" and "Atualfa" (sp??)) as opposed to those thick, woody "Tommy Atkins" ones you get in supermarkets.

I wasn't planning on canning just plain peaches...that's much too boring! Especially since you can get peaches canned in juice from Loblaw's :)
